
🌮 Crispy Surf & Turf Tacos with Avocado Salsa
📝 Ingredients
🥩 Steak:

1-2 Whole Skirt Steaks

2.5 tbsp Chipotle Garlic Rub

Canola Oil (as needed)
🦐 Shrimp:

1 lb Whole Shrimp (peeled & de-tailed)
-
2 tbsp Jalapeño Lime Pilsner Rub
-
Canola Oil (as needed)
🌮 Crispy Tacos:
-
Corn or Flour Tortillas
-
2 cups Shredded Jack Cheese
-
2 tbsp Chopped Red Onion
-
2 tbsp Chopped Cilantro
🥑 Avocado Salsa:
-
1 Whole Avocado
-
1 Whole Serrano Pepper
-
¼ cup Water
-
2 tbsp White Vinegar
-
2 tbsp Cilantro
-
2 tbsp White Onion
🔥 Instructions

Marinate the Meat:
-
Coat skirt steak with canola oil + Chipotle Garlic Rub.

Toss shrimp in oil + Jalapeño Lime Pilsner Rub.

Refrigerate both until ready to grill.

Grill Time:
-
Heat grill to 400°F.
-
Grill steak ~4 minutes per side (until ~120°F internal). Let rest.

On a cast iron skillet over the fire, cook shrimp 2-3 mins until pink and curled (a “C” shape, not “O”).

Slice steak against the grain, then cube it.

Assemble Tacos:

Warm tortillas, then layer with:

A handful of Jack cheese

A few shrimp
-
A scoop of chopped steak

Fold tacos in half.

Crisp 'Em Up:

Sear tacos on a hot cast iron skillet at 400°F for 1.5–2 mins per side, until golden & crispy.

Avocado Salsa:

Blend avocado, serrano, water, vinegar, cilantro, and onion until smooth.

Top tacos with avocado salsa, chopped cilantro, and red onion.
