Fresh, vibrant, and incredibly simple—this salad lets each ingredient shine. A perfect side dish or light lunch!
🛒 Ingredients

▢ 1 cup grape or cherry tomatoes, halved

▢ ¼ cup extra virgin olive oil

▢ ¾ teaspoon freshly grated ginger

Make the Dressing:
In a large bowl, whisk together olive oil, lemon juice, champagne vinegar, honey, ginger, salt, and pepper until well combined. -
Marinate the Avocados:
Gently toss in the diced avocados until coated. Let them marinate for 10–30 minutes while you prep the rest of your meal. -
Add Tomatoes & Basil:
Just before serving, stir in the halved tomatoes and torn basil leaves. -
Finish & Serve:
Drizzle with high-quality olive oil and sprinkle generously with flaky sea salt. Serve immediately and enjoy!
