AVOCADO TOMATO HERB SALAD


🥑 Marinated Avocado Tomato Salad with Basil

Fresh, vibrant, and incredibly simple—this salad lets each ingredient shine. A perfect side dish or light lunch!


🛒 Ingredients

  • 2 ripe avocados, diced into large chunks

  • 1 cup grape or cherry tomatoes, halved

  • Handful of fresh basil leaves

  • ▢ ¼ cup extra virgin olive oil

  • Juice of 1 lemon

  • 1 tablespoon champagne vinegar

  • 1 teaspoon honey

  • ▢ ¾ teaspoon freshly grated ginger

  • Salt & pepper, to taste

  • High-quality olive oil for drizzling (I love using Graza)

  • Flaky sea salt for serving (like Maldon)


👩‍🍳 Instructions

  1. Make the Dressing:
    In a large bowl, whisk together olive oil, lemon juice, champagne vinegar, honey, ginger, salt, and pepper until well combined.

  2. Marinate the Avocados:
    Gently toss in the diced avocados until coated. Let them marinate for 10–30 minutes while you prep the rest of your meal.

  3. Add Tomatoes & Basil:
    Just before serving, stir in the halved tomatoes and torn basil leaves.

  4. Finish & Serve:
    Drizzle with high-quality olive oil and sprinkle generously with flaky sea salt. Serve immediately and enjoy!


💡 Notes & Variations

  • This simple recipe shines on its own, but feel free to make it heartier!
    👉 Add chopped cucumber or chickpeas for a refreshing protein boost.

  • Best served fresh, but leftovers can be stored in the fridge for a few hours (avocados may brown slightly).
