Step 1: Make the Apple Filling

  1. In a medium saucepan over medium-high heat, combine:

    • Diced apples

    • Flour

    • 3 tbsp oat milk

    • 1 tsp vanilla

    • Nutmeg & pinch of salt

  2. Stir well, cover, and cook for 8–10 minutes, stirring occasionally until apples are soft and juicy.

  3. Remove from heat and let cool.


Step 2: Prep the Puff Pastry

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Cut each puff pastry sheet into 9 equal rectangles (total of 18 pieces).

  3. Arrange 9 rectangles on the prepared sheet.


Step 3: Assemble the Hand Pies

  1. Scoop 2–3 tablespoons of apple filling into the center of each rectangle.

  2. Place the remaining 9 rectangles on top.

  3. Press edges with a fork to seal.

  4. Brush the tops with oat milk (or egg wash, if not vegan).


Step 4: Bake

  1. Bake for 10–15 minutes, turning the pan halfway through, until puffed and golden brown.

  2. Let cool for at least 10 minutes before glazing.


Step 5: Make the Brown Sugar Glaze

  1. In a small bowl, whisk together:

    • Powdered sugar

    • Brown sugar

    • Cinnamon

    • Vanilla extract

    • 1 tbsp oat milk (add more as needed)

  2. Stir until smooth and thick but pourable.

  3. Spoon or drizzle glaze over the cooled hand pies.
