For the Tart

1 pack Angel Sweet® cherry tomatoes, sliced

6 sheets phyllo dough, thawed

6 tbsp butter, divided (2 tbsp for shallots, 4 tbsp for brushing dough)

Balsamic glaze, for drizzling

Fresh thyme leaves, for topping
Cheese Filling

2 shallots, thinly sliced
-
A few sprigs of fresh thyme, leaves removed
-
¼ cup softened or whipped cream cheese
-
⅓ cup grated sharp cheddar
-
1 egg yolk
-
Salt & black pepper, to taste

1. Prep Ingredients

Preheat your oven to 400°F (200°C).

Set out the phyllo dough to thaw according to package instructions.

Slice the cherry tomatoes and set aside.
2. Caramelize the Shallots

In a skillet over medium-low heat, melt 2 tbsp butter.

Add sliced shallots, a pinch of salt and pepper, and cook, stirring often, for 15 minutes, until deeply golden and soft.

Remove from heat and cool slightly.
3. Make the Cheese Filling

In a bowl, combine the caramelized shallots with:

¼ cup cream cheese

⅓ cup grated cheddar
-
Egg yolk
-
Thyme leaves
-
Salt and pepper to taste

Mix until smooth and creamy.
4. Layer the Phyllo

Melt the remaining 4 tbsp butter.

On a parchment-lined baking sheet, place one sheet of phyllo and brush with butter.

Repeat, layering and brushing butter between each of the 6 sheets.

Spoon the cheese filling into the center, spreading into a rustic circle, leaving a 1–2 inch border.

Arrange the sliced tomatoes on top in a circular pattern.

Gently crinkle and fold the edges inward to form a crust. Dab any flaky corners with more melted butter.
5. Bake & Finish

Brush the entire crust with butter and sprinkle with fresh thyme leaves.

Bake for 30 minutes, or until the tart is golden brown and crisp.

Let cool for 5 minutes, then drizzle with balsamic glaze and a sprinkle of flaky sea salt.
