🌯 Flank Steak Burritos (with Mexican Rice, Beans & Guacamole)

These hearty Flank Steak Burritos are packed with juicy steak, sautéed veggies, refried beans, Mexican rice, melty cheddar cheese, and guacamole—all wrapped in a warm flour tortilla and seared until golden. For the Marinade & Steak:

  • ¼ cup vegetable oil

  • 2 teaspoons kosher salt

  • ½ teaspoon coarse ground black pepper

  • 2 teaspoons ground cumin

  • 1 teaspoon chili powder

  • 1 teaspoon dried oregano

  • 1 lime, zested

  • 1 pound flank steak

For the Filling:

  • 1 yellow onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 2 cups Mexican rice (pre-cooked)

  • 15 ounces canned refried beans

  • ½ cup beef broth (or water)

  • 2 cups cheddar cheese, shredded

  • ¾ cup guacamole

  • 4 large flour tortillas (10-inch size)

🥩 Step 1: Marinate the Steak

In a large bowl, whisk together the oil, salt, pepper, cumin, chili powder, oregano, and lime zest.
Add in the flank steak, onions, and bell peppers, tossing well to coat. Let sit while you heat the skillet.

🔥 Step 2: Cook the Steak

Heat a large skillet over high heat.
Add the steak and cook for 4 minutes per side, or until desired doneness.
Remove and tent with foil. Let rest.

🧅 Step 3: Sauté Veggies

In the same skillet, cook the onion and bell pepper for 4–5 minutes until softened and slightly charred. Set aside.

  • Microwave the Mexican rice until warm.

  • In a saucepan, combine the refried beans with beef broth and warm over medium heat until smooth and slightly thinned.

🔪 Step 5: Chop the Steak

Slice the rested steak into ½-inch cubes.


🌯 Step 6: Assemble the Burritos

  1. Lay tortillas flat on a clean surface.

  2. Start with a layer of cheddar cheese.

  3. Add refried beans, rice, steak, sautéed veggies, and a scoop of guacamole.

  4. Leave a 2-inch border all around to help fold.

To Fold:

  • Fold both sides inward over the filling.

  • Roll up tightly from the bottom like a wrap.

Heat 1 tablespoon vegetable oil in a clean skillet over medium heat.
Place burritos seam-side down and cook for 3 minutes per side until golden and crisp.
