👨🍳 Instructions
🔥 To Make the Yum Yum Sauce:
-
In a bowl, combine mayonnaise (or yogurt mix), tomato paste, honey, rice vinegar, garlic, and smoked paprika.
-
Whisk until smooth, then thin with a little water to your preferred consistency.
-
Season with salt and pepper to taste. Refrigerate while you cook.
🍳 To Make the Fried Rice:
-
In a large cast iron skillet or griddle, melt butter over medium-high heat.
-
Add rice and sauté for 3–4 minutes, breaking up any clumps.
-
Push the rice to the sides and pour the beaten eggs into the center. Scramble the eggs, then stir them into the rice with the veggies.
-
Add soy sauce, sesame oil, and oyster sauce (if using). Stir well and cook for another 4–5 minutes until slightly crispy.
-
Transfer the fried rice to a plate and keep warm.
🥩 To Sauté the Veggies & Meat:
-
Drizzle more oil on the skillet or griddle. Add steak, shrimp, zucchini, and onions.
-
Work in batches if needed to avoid overcrowding.
-
Season with salt and pepper. Sauté everything for 8–10 minutes, until the steak is browned, shrimp is pink, and veggies are tender.
🍽️ To Serve:
Plate the fried rice with sautéed meat and vegetables on top. Drizzle generously with yum yum sauce or serve it on the side for dipping.
💡 Pro Tips
-
Day-old rice works best — it's drier and crisps up beautifully.
-
For extra flavor, marinate the steak in soy sauce and garlic 15 minutes before cooking.
-
Substitute tofu or mushrooms for a vegetarian version.
🍷 Perfect Pairings
-
Cold green tea or ginger ale
-
Light Japanese beer (like Sapporo)
-
Side of miso soup or a cucumber salad
❓FAQs
Can I prep this ahead?
Yes! Cook the rice and prep the sauce/meat/veggies in advance. Stir-fry everything when ready to eat.
Can I use chicken instead of steak and shrimp?
Absolutely. Thinly sliced chicken breast or thigh works great.
Is the Yum Yum Sauce spicy?
No — it’s creamy, slightly tangy, and kid-friendly. Add sriracha if you want heat.
