Spicy Basil Peach Glazed Chicken Thighs

  • 1 – lbs boneless, skinless chicken thighs

  • 2 tbsp olive oil

  • 2–3 ripe peaches, pitted and sliced

  • 2 jalapeños, sliced or chopped (adjust to heat preference)

  • 2 shallots, thinly sliced

  • 2 garlic cloves, minced

  • 1/4 cup pure maple syrup

  • 1/2 tsp each: salt, black pepper, ground cinnamon

  • 1/3 cup fresh basil, chopped

  • 1 lemon, juiced

  • 1/3 cup water (for deglazing)

  • Cooked basmati rice, for serving

  1. Sear the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Once shimmering, add chicken thighs and sear until browned on both sides (about 3–4 minutes per side).

  2. Add Aromatics & Fruit:
    Add sliced peaches, jalapeños, shallots, and minced garlic. Stir well to combine with the chicken.

  3. Season & Sweeten:
    Sprinkle in salt, black pepper, cinnamon, and drizzle with maple syrup. Stir and sauté until the peaches are softened, about 5–6 minutes.

  4. Deglaze & Simmer:
    Pour in 1/3 cup water to deglaze the skillet, scraping up any browned bits. Add lemon juice and chopped basil. Stir, then reduce heat to medium and cover. Simmer until chicken is fully cooked through, another 5–6 minutes.

  5. Serve:
    Spoon the peachy chicken mixture over fluffy basmati rice. Serve warm and enjoy!
