Ingredients:
- 1 1/2 cups steamed broccoli florets, roughly chopped
- 1 6.5-ounce container light garlic-herb spreadable cheese (i.e., Boursin or Alouette)
- 4 large eggs
- 1/2 cup melted butter
- 1 small sweet onion, finely diced
- 2 cups shredded sharp white cheddar cheese, divided
- 1 8.5-ounce box cornbread mix (such as Martha White or Jiffy)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry mustard
- 1/4 teaspoon onion powder
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C) and butter a 11 x 7-inch (2-quart) baking dish.
- In a mixing bowl, combine the steamed broccoli, garlic-herb cheese spread, eggs, melted butter, and diced onion.
- Stir in 1 cup of the cheddar cheese, cornbread mix, and seasonings until combined.
- Pour the batter into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
- Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out with moist crumbs.
