Broccoli Cheese Cornbread

 

Ingredients:

  • 1 1/2 cups steamed broccoli florets, roughly chopped
  • 1 6.5-ounce container light garlic-herb spreadable cheese (i.e., Boursin or Alouette)
  • 4 large eggs
  • 1/2 cup melted butter
  • 1 small sweet onion, finely diced
  • 2 cups shredded sharp white cheddar cheese, divided
  • 1 8.5-ounce box cornbread mix (such as Martha White or Jiffy)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon onion powder

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C) and butter a 11 x 7-inch (2-quart) baking dish.
  2. In a mixing bowl, combine the steamed broccoli, garlic-herb cheese spread, eggs, melted butter, and diced onion.
  3. Stir in 1 cup of the cheddar cheese, cornbread mix, and seasonings until combined.
  4. Pour the batter into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
  5. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out with moist crumbs.
