AIR FRYER ZUCCHINI – GLUTEN FREE + LOW CARB


Ingredients

  • Zucchini:

    • 2 medium zucchini, cut into ¼-inch slices (about 3–3.5 cups)
  • Seasoning:

    • 3 teaspoons olive oil
    • 2 tablespoons grated Parmesan cheese
    • 1 teaspoon chili powder
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground black pepper

Instructions

  1. Prepare the Zucchini:

    • Slice the zucchini into ¼-inch rounds or 1-inch pieces, depending on your preference.
    • Place the cut zucchini into a medium-sized mixing bowl.
  2. Mix the Seasoning:

    • In a small bowl, combine the grated Parmesan cheese, chili powder, garlic powder, Italian seasoning, salt, and black pepper.
  3. Season the Zucchini:

    • Drizzle the olive oil over the zucchini slices and toss to ensure they are evenly coated.
    • Add the Parmesan seasoning blend to the zucchini and toss again to coat thoroughly.
  4. Preheat the Air Fryer:

    • Preheat the air fryer to 400°F (200°C).
    • Lightly spray the air fryer basket with olive oil cooking spray to prevent sticking.
  5. Cook the Zucchini:

    • Arrange the zucchini slices in an even layer in the air fryer basket. Avoid overcrowding to ensure even cooking.
    • Close the air fryer and cook at 400°F (200°C) for 15-17 minutes, or until the zucchini is crispy and cooked through. Shake the basket halfway through cooking for even crisping.
  6. Serve:

    • Remove the zucchini chips from the air fryer and serve immediately while hot and crispy.
