Ingredients
For the Marinade:
- ¼ cup olive oil
- ¼ cup lemon juice
- Zest of 1 lemon
- 2-3 cloves garlic, crushed
- 2 tsp fresh thyme
- 2 tsp rosemary
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
For the Skewers:
- 4 large skinless, boneless chicken breasts
- Wooden skewers, soaked in boiling water for 30 minutes
Instructions
Prepare the Marinade:
- In a bowl, combine olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, oregano, salt, and pepper.
Marinate the Chicken:
- Cut the chicken breasts into bite-sized pieces and place them in a bowl. Pour the marinade over the chicken, cover, and refrigerate for at least 30 minutes, or up to 24 hours.
Prepare the Skewers:
- Thread the marinated chicken pieces onto the soaked wooden skewers or metal skewers.
Cook the Skewers:
- Preheat an outdoor grill or stovetop grill pan. Cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
Rest and Serve:
- Remove the skewers from the heat and let them rest for 5 minutes before serving.
