Easy herby lemon chicken skewers

 

Ingredients

For the Marinade:

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 2-3 cloves garlic, crushed
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

For the Skewers:

  • 4 large skinless, boneless chicken breasts
  • Wooden skewers, soaked in boiling water for 30 minutes

Instructions

  1. Prepare the Marinade:

    • In a bowl, combine olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, oregano, salt, and pepper.
  2. Marinate the Chicken:

    • Cut the chicken breasts into bite-sized pieces and place them in a bowl. Pour the marinade over the chicken, cover, and refrigerate for at least 30 minutes, or up to 24 hours.
  3. Prepare the Skewers:

    • Thread the marinated chicken pieces onto the soaked wooden skewers or metal skewers.
  4. Cook the Skewers:

    • Preheat an outdoor grill or stovetop grill pan. Cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
  5. Rest and Serve:

    • Remove the skewers from the heat and let them rest for 5 minutes before serving.
