Ingredients:

- 1/3 cup + 1 tablespoon olive oil

Greek Orzo Pasta Dish:
- 4 chicken breasts, cut into 2-inch pieces
- 1 tablespoon olive oil
- 2 medium red onions, diced
- 6 cloves garlic, minced
- 2 medium zucchini, diced
- 1 large tomato, diced
- 16 ounces dried orzo pasta
- 4 cups chicken broth (plus water if needed)
- 2 teaspoons oregano
- 1/3 cup sliced olives
- Lots of salt and pepper
- Topping: Feta cheese, olives, fresh parsley
Instructions:
- Marinate chicken: Combine marinade ingredients in a jar. Marinate chicken for at least 30 minutes.
- Prepare vegetables: Dice onion, garlic, zucchini, and tomato.
- Cook chicken: Heat olive oil in a skillet. Cook marinated chicken until cooked through.
- Cook pasta: In a large pot, sauté onions and garlic. Add orzo, broth, oregano, and salt. Cook until orzo is al dente.
- Combine: Add cooked chicken, vegetables, olives, and additional salt and pepper to pasta.
