Sumac Onions (Turkish Onion Salad)

Ingredients:

  • 2 large onions (red or white)
  • 2-3 teaspoons sumac
  • ½ teaspoon salt
  • ½ teaspoon pul biber (red pepper flakes), optional
  • ¼ cup parsley, chopped
  • Juice of ½ lemon
  • 2 teaspoons pomegranate molasses
  • 1 tablespoon olive oil

Instructions:

  1. Prepare Onions: Peel and slice the onions thinly. Place them in a bowl.
  2. Season Onions: Sprinkle sumac, salt, and optional red pepper flakes over the onions. Gently massage the onions with your hand to combine.
  3. Add Flavors: Add parsley, lemon juice, pomegranate molasses, and olive oil to the bowl. Stir well to combine.
  4. Serve: This salad can be served as a condiment alongside chicken or meat dishes, or as a garnish in sandwiches and wraps.

Notes:

  • Reducing Bitterness: If the onions are too bitter, sprinkle a little salt over them, soak in cold water for 1-2 minutes, then gently squeeze and drain.
  • Sumac Amount: Adjust the amount of sumac to taste, starting with 2 teaspoons and adding more if desired.
  • Optional Ingredients: Pul biber (red pepper flakes) and pomegranate molasses are optional but recommended for added flavor.
