Ingredients
Main Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef (or substitute with ground chicken or pork)
- 1.25-ounce package taco seasoning
- 1 10-ounce can Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 tablespoon tomato paste
- 8 ounces spaghetti
- 3 cups water
Toppings:
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 Roma tomato, diced
- 2 tablespoons chopped fresh cilantro leaves
Instructions
Cook the Beef:
- Heat olive oil in a large stockpot or Dutch oven over medium-high heat.
- Add ground beef and cook until browned, about 3-5 minutes, breaking it apart as it cooks.
- Stir in the taco seasoning and drain any excess fat.
Cook the Pasta:
- Stir in the Ro*Tel®, tomato paste, spaghetti, and 3 cups of water.
- Bring to a boil, then cover and reduce heat to simmer.
- Cook until the pasta is tender, about 13-16 minutes.
Add Cheese:
- Remove from heat and sprinkle with cheddar and mozzarella cheeses.
- Cover the pot until the cheese melts, about 2 minutes.
Serve:
- Garnish with diced Roma tomato and chopped cilantro. Serve immediately.
