One Pot Taco Spaghetti

Ingredients

  • Main Ingredients:

    • 1 tablespoon olive oil
    • 1 pound ground beef (or substitute with ground chicken or pork)
    • 1.25-ounce package taco seasoning
    • 1 10-ounce can Ro*Tel® Mild Diced Tomatoes & Green Chilies
    • 1 tablespoon tomato paste
    • 8 ounces spaghetti
    • 3 cups water
  • Toppings:

    • ½ cup shredded cheddar cheese
    • ½ cup shredded mozzarella cheese
    • 1 Roma tomato, diced
    • 2 tablespoons chopped fresh cilantro leaves

Instructions

  1. Cook the Beef:

    • Heat olive oil in a large stockpot or Dutch oven over medium-high heat.
    • Add ground beef and cook until browned, about 3-5 minutes, breaking it apart as it cooks.
    • Stir in the taco seasoning and drain any excess fat.
  2. Cook the Pasta:

    • Stir in the Ro*Tel®, tomato paste, spaghetti, and 3 cups of water.
    • Bring to a boil, then cover and reduce heat to simmer.
    • Cook until the pasta is tender, about 13-16 minutes.
  3. Add Cheese:

    • Remove from heat and sprinkle with cheddar and mozzarella cheeses.
    • Cover the pot until the cheese melts, about 2 minutes.
  4. Serve:

    • Garnish with diced Roma tomato and chopped cilantro. Serve immediately.
