Step-by-Step Instructions

1. Prepare the Dish

✅ Line and grease a 9×9-inch square dish with parchment paper.

2. Make the Honeycomb

✅ Add sugar and syrup to a deep pot over medium heat.
✅ Stir constantly until the mixture is fully melted.
✅ Continue cooking until the sugar turns a golden amber color.

3. Add the Bicarbonate of Soda

✅ Quickly stir in the bicarbonate of soda.
✅ Be careful! The mixture will steam and bubble rapidly.
✅ As soon as combined, immediately pour the mixture into the prepared dish.

4. Let It Set

✅ Allow the honeycomb to set at room temperature for about 1 hour.
✅ Once hardened, cut into chunks using a sharp knife.

5. Coat in Chocolate

✅ Melt the chocolate in a heatproof bowl.
✅ Dip each honeycomb chunk into the melted chocolate, coating well.
✅ Place coated pieces on a parchment-lined tray.

6. Set & Store

✅ Chill in the fridge for 30 minutes until the chocolate is fully set.
✅ Store in an airtight container at room temperature.
