Blackened Chicken Alfredo


📝 Ingredients

  • 3 boneless skinless chicken breasts

  • 1 box mini farfalle pasta (or any bite-sized pasta)

  • 1 tbsp Cajun’s Choice blackened seasoning

  • 4 tbsp unsalted butter

  • 1 bunch green onions (sliced)

  • ½ cup chopped sun-dried tomatoes

  • ½ tsp dried basil

  • ½ tsp garlic powder

  • Pinch of salt and pepper

  • 1 quart whipping cream

  • 1½ cups shredded or grated Parmesan cheese


👩‍🍳 Instructions

  1. Cook the Chicken:
    Season chicken with salt, pepper, and blackened seasoning. Grill or pan-cook for 3–4 minutes on each side, until fully cooked. Let cool, then cut into 1-inch cubes. Set aside.

  2. Prep Aromatics:
    Thinly slice green onions and chop sun-dried tomatoes.

  3. Make the Sauce:
    In a large skillet, melt butter over medium-high heat. Add green onions, sun-dried tomatoes, basil, garlic powder, salt, and pepper. Cook for ~2 minutes.

  4. Add Cream & Cheese:
    Reduce heat to low. Add whipping cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.

  5. Combine:
    Add cubed chicken into the sauce and stir occasionally.

  6. Cook Pasta:
    Prepare pasta according to package directions. Drain and add to the sauce. Mix well.

  7. Serve:
    Plate it up while hot, maybe with extra Parmesan or fresh herbs on top!
