Easy Recipe For Classic French Pistou Sauce

🌿 Classic French Pistou (Basil-Garlic Sauce)

📝 Ingredients

  • 4 cloves garlic (peeled & chopped)

  • Sea salt (to taste)

  • 2 cups fresh basil leaves (packed)

  • 125 ml (about ½ cup) extra virgin olive oil

🔥 Instructions

  1. Prep the Garlic

    • Peel and roughly chop the garlic cloves.

  2. Grind Garlic & Salt

    • In a mortar and pestle (or food processor), grind the garlic with a pinch of sea salt until it forms a smooth paste.

  3. Add Basil

    • Add basil leaves gradually, pounding or pulsing until fully combined into a vibrant green paste.

  4. Incorporate Olive Oil

    • Slowly drizzle in the olive oil while mixing until the sauce reaches a smooth, silky consistency and won’t absorb any more oil.

  5. Taste & Adjust

    • Season with more salt if needed. Done!

  6. Store Properly

    • Store in an airtight container:

      • Fridge: Up to 4 days

      • Freezer: Up to 3 months (ice cube trays work great for small portions!)

💡 Notes & Uses

  • Use pistou just like pesto:

    • Tossed with pasta

    • Drizzled on grilled veggies or meats

    • Swirled into soups or stews

    • Spread onto sandwiches or toast

  • For a twist, add a little grated Parmesan or lemon zest just before serving.
