Carrot Raisin Salad

Ingredients:

  • 4 1/2 cups shredded carrots

  • 3/4 cup raisins

  • 1 (8 ounce) can crushed pineapple, including the juice

  • 1/4 cup granulated sugar

  • 1/2 cup mayonnaise

  • 1 1/2 tablespoons freshly squeezed lemon juice

  • 1/2 cup pineapple chunks or tidbits (optional, for garnish)


Instructions:

  1. Combine the Ingredients:

    • In a large mixing bowl, combine the shredded carrots, raisins, crushed pineapple (with juice), sugar, mayonnaise, and lemon juice.

  2. Mix Thoroughly:

    • Stir everything together thoroughly until all the ingredients are evenly coated.

  3. Refrigerate:

    • Cover the bowl and place it in the refrigerator for at least 2 hours to allow the flavors to develop and meld together.

  4. Serve:

    • Serve chilled and garnish with pineapple chunks if desired. Enjoy!


Notes:

  • For extra texture, you can add chopped walnuts or pecans.

  • This salad can be made a day ahead and stored in the fridge for the best flavor.
