Easy Baked cheesy Zucchini Casserole recipe!



🥒 Cheesy Zucchini Bake with Crispy Topping

📝 Ingredients

  • Fresh Zucchinis – sliced into rounds

  • 1 Onion – diced

  • 2–3 cloves Garlic – minced

  • 1–1½ cups Mozzarella Cheese – shredded

  • ½ cup Parmesan Cheese – grated

  • ½ cup Breadcrumbs

  • 1–2 tbsp Olive Oil

  • 1 tsp Italian Seasoning

  • Salt & Pepper – to taste


🔥 Instructions

  1. Preheat the Oven

    • Set your oven to 375°F (190°C).

  2. Sauté the Veggies

    • In a skillet, heat olive oil over medium heat.

    • Add diced onion and garlic, cook until soft and fragrant (about 2–3 mins).

    • Add zucchini rounds and sauté until just tender, about 5–7 minutes.

  3. Assemble the Casserole

    • Transfer sautéed veggies to a baking dish.

    • Sprinkle with shredded mozzarella and grated Parmesan.

  4. Add the Crunch

    • In a small bowl, mix breadcrumbs with Italian seasoning, salt, and pepper.

    • Sprinkle evenly over the cheesy zucchini mixture.

  5. Bake It Up

    • Bake for 20–25 minutes, or until cheese is bubbly and the top is golden brown.

  6. Cool & Serve

    • Let cool slightly, then dig in while it’s melty and crispy!


💡 Notes & Add-Ons:

  • No breadcrumbs? Try crushed crackers or cornflakes.
