Traditional Greek Omelette Recipe: Easy To Make

🍳 Greek Omelet with Feta, Spinach & Cherry Tomatoes

📝 Ingredients

  • 3 large eggs

  • ¼ cup feta cheese, crumbled

  • ¼ cup cherry tomatoes, halved

  • ¼ cup spinach, chopped

  • ¼ cup red onion, finely chopped

  • 1 tbsp olive oil

  • 1 tbsp fresh parsley, chopped

  • Salt & pepper to taste

🔥 Directions

  1. Whisk the Eggs

    • Crack the eggs into a bowl and whisk until smooth and well-beaten.

  2. Prep the Veggies

    • Chop cherry tomatoes, spinach, red onion, and parsley.

  3. Sauté the Vegetables

    • Heat olive oil in a non-stick skillet over medium heat.

    • Add red onion and sauté for 2–3 minutes until softened.

    • Stir in spinach and cherry tomatoes, cooking for another 2–3 minutes until spinach wilts and tomatoes soften.

  4. Cook the Eggs

    • Pour the beaten eggs evenly over the sautéed veggies.

    • Let the eggs set around the edges, then gently lift them with a spatula, tilting the pan so uncooked egg flows underneath.

    • Continue until the omelet is mostly set but still slightly runny on top.

  5. Add the Feta & Parsley

    • Sprinkle crumbled feta and chopped parsley over one half of the omelet.

  6. Fold & Finish

    • Once the eggs are fully set but moist, fold the omelet in half.

    • Slide it onto a plate.

  7. Serve It Up

    • Garnish with extra parsley and season with salt & pepper to taste.

    • Serve hot and enjoy that savory Greek-inspired goodness!
