📝 Ingredients
-
3 large eggs
-
¼ cup feta cheese, crumbled
-
¼ cup cherry tomatoes, halved
-
¼ cup spinach, chopped
-
¼ cup red onion, finely chopped
-
1 tbsp olive oil
-
1 tbsp fresh parsley, chopped
-
Salt & pepper to taste
🔥 Directions
-
Whisk the Eggs
-
Crack the eggs into a bowl and whisk until smooth and well-beaten.
-
-
Prep the Veggies
-
Chop cherry tomatoes, spinach, red onion, and parsley.
-
-
Sauté the Vegetables
-
Heat olive oil in a non-stick skillet over medium heat.
-
Add red onion and sauté for 2–3 minutes until softened.
-
Stir in spinach and cherry tomatoes, cooking for another 2–3 minutes until spinach wilts and tomatoes soften.
-
-
Cook the Eggs
-
Pour the beaten eggs evenly over the sautéed veggies.
-
Let the eggs set around the edges, then gently lift them with a spatula, tilting the pan so uncooked egg flows underneath.
-
Continue until the omelet is mostly set but still slightly runny on top.
-
-
Add the Feta & Parsley
-
Sprinkle crumbled feta and chopped parsley over one half of the omelet.
-
-
Fold & Finish
-
Once the eggs are fully set but moist, fold the omelet in half.
-
Slide it onto a plate.
-
-
Serve It Up
-
Garnish with extra parsley and season with salt & pepper to taste.
-
Serve hot and enjoy that savory Greek-inspired goodness!
