📝 Ingredients

  • 1 can kidney beans, rinsed and drained

  • 1 can tuna, drained

  • 1 small red onion, finely chopped

  • 1 red bell pepper, diced

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


👩‍🍳 Instructions

  1. Combine the Base
    In a large mixing bowl, add kidney beans and tuna.

  2. Add the Veggies
    Stir in chopped red onion and diced red bell pepper.

  3. Make the Dressing
    In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

  4. Toss and Coat
    Pour the dressing over the salad and gently toss until evenly combined.

  5. Taste & Adjust
    Sample and adjust seasoning if needed.

  6. Finish with Garnish
    Sprinkle with chopped fresh parsley.

  7. Chill or Serve
    Serve immediately, or refrigerate for up to 2 hours to let the flavors meld.
