Homemade Chicken Nuggets

🍗 Crispy Chicken Nuggets with Honey Mustard & Sweet Chilli Dips

🛒 Ingredients

For the Nuggets:

  • 4 chicken breasts, skinless & boneless

  • 50 g Greek yoghurt (see notes)

  • 50 g Panko breadcrumbs (see notes)

  • 30 g grated Parmesan

  • 2 tsp paprika (see notes)

  • 2 tsp garlic powder

  • Salt & pepper, to taste

  • Olive oil or oil spray (see notes)

For the Honey Mustard Dip:

  • 75 g Greek yoghurt

  • 3 tsp runny honey

  • 1 tsp wholegrain mustard

For the Sweet Chilli Mayo:

  • 100 g mayonnaise

  • 5 tsp sweet chilli sauce

🔧 Instructions

1. Prep the Chicken

  • Preheat your oven to 220°C (430°F).

  • Cut chicken breasts into bite-sized chunks. Kitchen scissors work well here.

  • In a bowl, mix the chicken pieces with Greek yoghurt to coat.

2. Bread the Nuggets

  • In a separate bowl, mix:
breadcrumbs, Parmesan, paprika, garlic powder, salt & pepper.

  • Coat each yoghurt-covered piece of chicken in the breadcrumb mix until well coated.

🔥 To Cook in the Oven

  1. Line a baking tray (or two) with parchment paper.

  2. Place chicken pieces spaced apart — don’t overcrowd.

  3. Drizzle or spray each nugget with olive oil.

  4. Bake for 20–25 minutes, or until golden and crispy.
(Oven time may vary — check doneness internally.)

🍟 To Cook in the Air Fryer

  1. Place coated chicken in the air fryer basket in a single layer. Don’t overcrowd; cook in batches if needed.

  2. Air fry at 200°C (390°F) for 15 minutes, or until golden and cooked through.

  3. For extra crispiness, cook a few minutes longer if needed.
(Use a food thermometer to check chicken is fully cooked.)

🥣 Make the Dips

While the nuggets cook, mix each sauce in its own small bowl:

Honey Mustard Dip:

  • Greek yoghurt + honey + mustard

Sweet Chilli Mayo:

  • Mayonnaise + sweet chilli sauce

🍽️ To Serve

Serve the chicken nuggets hot with both dips on the side. Great for kids, parties, or weeknight dinners!

📝 Notes & Tips

  • Greek yoghurt: Thick Greek-style works best to bind breadcrumbs. If using regular yoghurt, reduce quantity slightly.

  • Breadcrumbs: Panko = extra crunch. Regular or homemade breadcrumbs also work.

  • Paprika swap: Try smoked paprika, chilli flakes, or a dash of cayenne for more heat.

  • Oil tip: A spray bottle makes oiling nuggets super easy and even.

  • Air fryer paddle users: Remove the paddle if your model has one — it may knock the coating off.

  • Shallow frying: You can also fry in oil, but baking or air frying keeps things lighter.

  • Batch cook & freeze: Freeze nuggets flat for 1–2 hours, then transfer to a freezer bag. Defrost and reheat as needed.
