Ingredients:
- 1 pound cooked and shredded chicken
- 3 cups cooked rice
- 2 tablespoons sesame oil
- 1 onion, diced
- 1 cup frozen peas and carrots, thawed
- 2 tablespoons soy sauce (more to taste)
- 2 eggs, beaten
- 2 tablespoons chopped green onions (optional)
Instructions:
- Preheat a medium skillet or wok over medium heat.
- Add the sesame oil, onion, and peas and carrots. Cook until tender.
- Slide the onion, carrots, and peas to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
- Combine the eggs with the onion, carrots, and peas.
- Add the cooked rice and shredded chicken to the skillet and combine with the egg mixture.
- Pour the soy sauce over the top and stir to combine.
- Add the green onions (if using) and serve.
Tips:
- For a spicier chicken fried rice, add a pinch of red pepper flakes or a dash of sriracha sauce.
- If you want to add more vegetables to your chicken fried rice, you can add chopped broccoli, bell peppers, or mushrooms.
- If you don't have any cooked chicken, you can use canned chicken or tofu instead.
- Serve your chicken fried rice with your favorite sides, such as fortune cookies, spring rolls, or dumplings.
