BETTER THAN TAKEOUT CHICKEN FRIED RICE


 Ingredients:

  • 1 pound cooked and shredded chicken
  • 3 cups cooked rice
  • 2 tablespoons sesame oil
  • 1 onion, diced
  • 1 cup frozen peas and carrots, thawed
  • 2 tablespoons soy sauce (more to taste)
  • 2 eggs, beaten
  • 2 tablespoons chopped green onions (optional)

Instructions:

  1. Preheat a medium skillet or wok over medium heat.
  2. Add the sesame oil, onion, and peas and carrots. Cook until tender.
  3. Slide the onion, carrots, and peas to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  4. Combine the eggs with the onion, carrots, and peas.
  5. Add the cooked rice and shredded chicken to the skillet and combine with the egg mixture.
  6. Pour the soy sauce over the top and stir to combine.
  7. Add the green onions (if using) and serve.

Tips:

  • For a spicier chicken fried rice, add a pinch of red pepper flakes or a dash of sriracha sauce.
  • If you want to add more vegetables to your chicken fried rice, you can add chopped broccoli, bell peppers, or mushrooms.
  • If you don't have any cooked chicken, you can use canned chicken or tofu instead.
  • Serve your chicken fried rice with your favorite sides, such as fortune cookies, spring rolls, or dumplings.
