Ingredients:
- 1 head of broccoli, chopped
- 1/2 large yellow onion, diced (or 1 onion)
- 5 slices of turkey bacon
- 8 eggs
- 1/2 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp salt
- Pepper to taste
Instructions:
- Preheat Oven: Set the oven to 400°F (200°C).
- Cook Turkey Bacon: Cook the turkey bacon according to the package instructions. Once done, remove from the pan and cut into small chunks.
- Sauté Veggies: In the same pan, add olive oil and sauté the chopped broccoli and diced onion. Season with salt and pepper. Cook for 5-10 minutes until the veggies are tender.
- Prepare Egg Mixture: In a bowl, whisk the eggs. Add the shredded cheddar cheese, garlic powder, 1/4 tsp salt, and pepper. Mix until well combined.
- Combine and Bake: Grease a large baking dish. Add the sautéed veggies and chopped turkey bacon to the dish and spread evenly. Pour the egg mixture over the top, ensuring all the ingredients are covered.
- Optional Cheese Topping: Sprinkle extra cheddar cheese on top if desired.
- Bake: Bake in the preheated oven for 20 minutes, or until the eggs are set and the top is golden.
- Cool and Serve: Let cool slightly, then cut into squares and serve.
