Broccoli Cheddar Egg Bake with Turkey Bacon


Ingredients:

  • 1 head of broccoli, chopped
  • 1/2 large yellow onion, diced (or 1 onion)
  • 5 slices of turkey bacon
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Pepper to taste

Instructions:

  1. Preheat Oven: Set the oven to 400°F (200°C).
  2. Cook Turkey Bacon: Cook the turkey bacon according to the package instructions. Once done, remove from the pan and cut into small chunks.
  3. Sauté Veggies: In the same pan, add olive oil and sauté the chopped broccoli and diced onion. Season with salt and pepper. Cook for 5-10 minutes until the veggies are tender.
  4. Prepare Egg Mixture: In a bowl, whisk the eggs. Add the shredded cheddar cheese, garlic powder, 1/4 tsp salt, and pepper. Mix until well combined.
  5. Combine and Bake: Grease a large baking dish. Add the sautéed veggies and chopped turkey bacon to the dish and spread evenly. Pour the egg mixture over the top, ensuring all the ingredients are covered.
  6. Optional Cheese Topping: Sprinkle extra cheddar cheese on top if desired.
  7. Bake: Bake in the preheated oven for 20 minutes, or until the eggs are set and the top is golden.
  8. Cool and Serve: Let cool slightly, then cut into squares and serve.
