Ingredients:
- 20 oz. Three Cheese Tortellini (or your favorite kind)
- 8 oz. cream cheese
- 1 ½ cups chicken or vegetable stock
- 6 cups loosely packed baby spinach leaves
- 1 cup Colby Jack or mozzarella cheese, shredded
Instructions:
- Cook Tortellini: Cook the tortellini according to package instructions and set aside.
- Make Cream Cheese Sauce: In a large, oven-proof skillet, simmer the cream cheese with the chicken or vegetable stock over medium heat for about 10 minutes until smooth and creamy.
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Add Spinach: Add the baby spinach leaves to the cream cheese sauce and simmer for another 5 minutes, until the spinach is wilted and well incorporated.
- Combine and Top with Cheese: Add the cooked tortellini to the skillet and mix everything well. Sprinkle the shredded cheese evenly over the top.
- Bake: Place the skillet in the preheated oven and bake for 7-10 minutes, until the cheese is melted and bubbly.
- Serve: Remove from the oven, let cool slightly, and serve hot.
