Ingredients
- 2½ tablespoons olive oil or avocado oil
- 4 fully cooked sausages, sliced into ¼-inch circles
- 2 medium zucchinis, cubed
- 1 onion, cut into ¾-inch pieces
- 1 bell pepper (any color), cut into ¾-inch pieces
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- 1 teaspoon garlic, minced (optional: fresh basil for garnish)
Instructions
Sauté the Sausage:
- Heat 1 tablespoon of oil in a large skillet over medium-high heat.
- Add the sliced sausage and cook, flipping frequently, for 1-2 minutes until browned. Remove the sausage and set aside.
Cook the Vegetables:
- Reduce heat to medium and add the remaining 1½ tablespoons of oil to the skillet.
- Add the zucchini, onion, and bell pepper. Season with salt, oregano, basil, garlic powder, onion powder, and black pepper.
- Stir and cook until the onion is translucent and the zucchini and bell pepper are nearly tender, about 5-10 minutes.
Combine and Finish:
- Return the sausage to the skillet along with the minced garlic. Stir to combine.
- Cover and cook for an additional 1-2 minutes, or until everything is heated through. Taste and adjust seasoning with extra salt if needed.
Garnish and Serve:
- Garnish with chopped fresh basil if desired.
