20 Minute Skillet Sausage & Zucchini

Ingredients

  • 2½ tablespoons olive oil or avocado oil
  • 4 fully cooked sausages, sliced into ¼-inch circles
  • 2 medium zucchinis, cubed
  • 1 onion, cut into ¾-inch pieces
  • 1 bell pepper (any color), cut into ¾-inch pieces
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic, minced (optional: fresh basil for garnish)

Instructions

  1. Sauté the Sausage:

    • Heat 1 tablespoon of oil in a large skillet over medium-high heat.
    • Add the sliced sausage and cook, flipping frequently, for 1-2 minutes until browned. Remove the sausage and set aside.
  2. Cook the Vegetables:

    • Reduce heat to medium and add the remaining 1½ tablespoons of oil to the skillet.
    • Add the zucchini, onion, and bell pepper. Season with salt, oregano, basil, garlic powder, onion powder, and black pepper.
    • Stir and cook until the onion is translucent and the zucchini and bell pepper are nearly tender, about 5-10 minutes.
  3. Combine and Finish:

    • Return the sausage to the skillet along with the minced garlic. Stir to combine.
    • Cover and cook for an additional 1-2 minutes, or until everything is heated through. Taste and adjust seasoning with extra salt if needed.
  4. Garnish and Serve:

    • Garnish with chopped fresh basil if desired.
