Crispy Feta Fried Eggs


Ingredients:

  • 1 large egg
  • 20 grams feta cheese
  • 1 small tortilla or slice of toasted bread
  • 1/2 avocado, mashed
  • Dried oregano
  • Red pepper flakes
  • Cooking oil spray or olive oil spray
  • Lemon juice
  • Pickled onions
  • Chili oil
  • Salt and pepper to taste

Instructions:

  1. Heat pan: Heat a small skillet over medium heat. Spray with cooking oil.
  2. Cook feta: Crumble feta cheese into the pan. Cook until golden brown and melted.
  3. Crack egg: Gently crack egg into the center of the pan. Season with salt, pepper, and a sprinkle of dried oregano and red pepper flakes. Cook to desired doneness.
  4. Warm tortilla: Warm tortilla on a gas stove, in the oven, or in the microwave.
  5. Assemble: Place warmed tortilla on a plate. Top with mashed avocado, lemon juice, cooked egg, and crumbled feta cheese.
  6. Garnish: Garnish with pickled onions and a drizzle of chili oil.

Optional additions:

  • For extra flavor: Add a pinch of garlic powder or onion powder to the egg mixture.
  • For a smoky flavor: Add a pinch of smoked paprika to the egg mixture.
  • For a tangy kick: Add a squeeze of hot sauce or sriracha to the egg mixture.
  • For additional toppings: Add chopped spinach, arugula, or tomato slices to the tortilla.
