Cheesy Beef Stuffed Potato Cakes

Ingredients:

  • 4 large potatoes, peeled and grated
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Prepare the Potatoes: Grate the potatoes and squeeze out excess moisture.
  2. Cook the Beef and Vegetables: Heat olive oil in a pan over medium heat. Add ground beef, onion, garlic, and paprika. Cook until the beef is browned and the onions are softened. Season with salt and pepper.
  3. Assemble the Cakes: Place a potato patty on a plate. Top with a spoonful of the beef mixture and a sprinkle of cheese. Cover with another potato patty and seal the edges.
  4. Fry the Cakes: Heat oil in a skillet over medium heat. Fry the potato cakes until golden brown on both sides.
  5. Serve: Serve hot with your favorite dipping sauce, such as ketchup or aioli.

Tips:

  • For extra crispy cakes, you can dip them in a beaten egg before frying.
  • You can also bake the cakes in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown and crispy.
  • To make these cakes more hearty, you can add some chopped spinach or mushrooms to the beef mixture.
