Ingredients:
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, sliced
- 1/2 teaspoon salt and pepper
- 1/4 teaspoon paprika seasoning
- 150 grams cooked chicken pieces
- 1/2 teaspoon 13-spice chicken seasoning
- 2 tablespoons homemade basil pesto
- 200 grams angel hair pasta
- 1/2 cup fresh parsley
- Fresh lemon, for squeezing
- Yogurt or sour cream, for serving
Instructions:
- Cook pasta: Bring a pot of salted water to a boil. Cook angel hair pasta until al dente, reserving a cup of pasta water.
- Sauté tomatoes: Heat olive oil in a skillet. Season cherry tomatoes with salt, pepper, and paprika. Cook until bursting with flavor.
- Add chicken: Move tomatoes to one side of the skillet. Add seasoned chicken pieces and cook for 1 minute.
- Combine: Add basil pesto and cooked pasta to skillet. Toss to coat.
- Finish: Add reserved pasta water as needed to achieve desired consistency. Season with salt and pepper.
- Serve: Serve with fresh lemon, yogurt or sour cream, and fresh parsley.
