Ingredients:
- 1 pound fresh chorizo sausage, casings removed
- 1 tablespoon oil
- 1 pound potatoes, diced
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon butter
- 1/4 cup onion, diced
- 1 jalapeno pepper, finely diced
- 8 eggs, lightly beaten
- Salt and pepper to taste
- 4 large (12+ inch) flour tortillas
- 4 ounces cheese (such as cheddar or jack), sliced or shredded
- 1/2 cup salsa verde
Instructions:
- Cook chorizo: Cook the chorizo in a large pan over medium heat until cooked through.
- Cook potatoes: Heat the oil in a large pan over medium heat, add potatoes seasoned with paprika, salt, and pepper, and cook until golden brown on all sides.
- Sauté vegetables and cook eggs: Melt the butter in a large pan over medium heat, add the onions and jalapeno, and cook until tender, about 5 minutes. Add the eggs, seasoned with salt and pepper, and cook scrambled style.
- Assemble burritos: Divide the sausage, potatoes, eggs, cheese, and salsa between the tortillas, wrap, and optionally toast in a pan over medium heat until lightly golden brown.
Tips:
- If you have 3 pans and burners, you can cook the sausage, potatoes, and eggs at the same time!
- Make any of the components ahead of time and store in the fridge.
- These burritos are great for a quick, on-the-go breakfast!
- Replace chorizo with breakfast sausage or bacon.
- Replace potatoes with tater tots or hash browns.
- Roast the potatoes in the oven instead of pan frying.
- Replace salsa verde with your favorite salsa, sweet chili sauce, or pico de gallo.
- Add avocado or guacamole.
- Add sour cream.
